Coconut Oatmeal Chocolate Chip Cookies

Get excited, because today I have an another amazing healthy baking recipe for you.

I’m talking coconut oil to the max along with shredded coconut, oats, just a bit of sugar, cinnamon and a few chocolate chips.

These little Coconut Oatmeal Chocolate Chip Cookies are packed with flavor and health and you won’t miss the butter.

The secret to these is that since the coconut oil is melted, you have to let the cookies rest in the fridge for at least a few hours.

This really makes the oil solidify like butter and the cookies come out perfectly crunchy with soft, chewy insides when baked.

Honestly, I ate 3 of these on the first day I made them (2 after lunch and 1 after dinner).

They’ve got the perfect mixture of chewy, crunchy, smooth and the hint of cinnamon sends them over the moon.
