Hello, friend!
Whew- what a few months it’s been. Have you also felt time rushing forward but also dragging at times?
We certainly have as we welcomed our first child, baby James, into the world and have been adjusting to life with a hungry, sweet and all-consuming little one. Parenting is a trip, but we’re settling in and enjoying special times (and surviving the crazy times!).
I know I haven’t been the best at posting over the past year or so, and I would like to get back on the saddle and maybe even simplify. So, here’s my attempt at doing that with a “weekly meal mix” post.
It’s like a meal plan, but since I’m never for sure which meals we will have on which days (we like to keep some spontaneity in our lives), I’m calling this a mix.
Let’s mix it up. Let’s get cooking…but let’s make it easy peasy!
And what better time to start this but on my 10th blogging anniversary?! Let’s do it!
Here’s our weekly meal mix for the week of October 11:
- Leftover bolognese sauce with pasta (we froze this extra sauce months ago and plan to mix it with some spaghetti) and arugula salad
- Roast chicken with veggies
- Out for sushi
- Shrimp tacos (probably like this recipe) with slaw and chips and guacamole
- Family lunch and brunch (my aunt from KY is visiting- yay!)
What I’m snacking on:
- Fresh apples from my farmers market: Virginia Beauty & Arkansas Black are the varieties I’ve got in my fridge for snacking and baking
