Have you ever made a recipe, thought it was amazing and then accidentally forgot about it for months or years?
If so, you’re in good company. There are too many good recipes out there and sometimes they just slip our minds. One good thing about having a food blog is that I have records of all these tasty recipes — but I still forget, too!
If you follow me on Insta, then you may have seen a few of these recipes in the past few months. But I thought these were so good when I made them that I had to share again!
Pork Lettuce Wraps
We just made these last week, after getting a head of hydroponic lettuce in our CSA, and I’m so glad that we did. I forgot how utterly easy and delicious these are. All you have to do is cook up the pork with some ginger and green onions, add some hoisin sauce and then top with more green onions and cilantro. Then, wrap it up in as many lettuce tacos as you want. We also made a quick slaw to pair with ours of thinly sliced carrot, red onion, cabbage, lime juice, vinegar and seasonings. The leftovers were even great on a salad or on top of farro (or you could do rice instead).
Blueberry Peach Buckle
Oh my goodness! If this isn’t one of the best things I’ve baked this year, I don’t know what is. This is the perfect cakey recipe to enrobe your summer fruits in. The last two I made were with blueberreies, rhubarb and peaches, and they were amazing. Grab some almond extract and get to baking this buckle!
Aunt Mag’s Brisket
Sometimes you get lucky and a loved one requests a recipe that you forgot about, which leads you on the road to rediscovering. That’s exactly what happened with this amazing oven bbq brisket recipe. My husband requested it for his birthday dinner, and I was more than happy to cook it (and use a local brisket, too). All this one takes is time and a few ingredients!
Sausage Hashbrown Casserole
This breakfast casserole is a must-have for big brunch gatherings with friends or family. I was reminded of just that on our family beach trip last month. I whipped this baby up at our rental house and we paired it with frozen biscuits, jam and fruit. It was a delight and fed our crowd of 12 (we even had some leftovers).
