It’s March, people. March! 2020 is whizzing by, and I feel like February was kind of a blur.
In between a quick trip to the ER (I’m fine, thankfully, just a sufferer of low blood pressure), terrible food poisoning and our dog getting spayed, it was a wild month.
And I don’t know about you, but it doesn’t have to be January to get back to eating easy, healthy meals!
I hope you’re with me because I’ve got a simple post to share the healthy, reset-like meals that have been keeping us feeling good (as much as we can control).
Here are 3 quick and healthy meals from my kitchen to yours:
1. Vegetable Soup
I’m not talking about that clumpy, weird pieces of vegetable soup that comes out of a can. I’m talking about you making a killer, healthy and delicious soup that features vegetables. Whether you’re roasting all the veggies you have and blending with stock and coconut milk or milk or cream, or sauteing vegetables and adding some spices and broth, it will be great.

2. Curry vegetables and a grain
Curry paste is totally your key to a quick and flavorful meal. Doesn’t it feel nice to make a delicious sauce for your food? With curry paste, you can do that in like 10-30 minutes, which is amazing! Curry powder is a great spice to have in your pantry, too! You can just roast veggies with dry curry powder and jazz them up that way.

3. Baked sweet potatoes
This is an almost weekly wonder in our house. And although I love a good baked white potato, baked sweet potatoes are even healthier and more colorful, too. I love how sweet potatoes act as a blank canvas to whatever you have on hand to stuff in them. From the simple sour cream or yogurt with salt and pepper to black beans, cheese and hot sauce, “the potato is your oyster” if you will.

- Black bean sweet potato
- Top with steamed broccoli and cheese
- Top with yogurt or sour cream and fresh arugula or sauteed spinach
