One of our favorite go-to vegetarian, tasty, easy and healthy meals are tacos.
Who can say not to a taco?! And you know we always have tortillas, shredded cheese, salsa, sour cream and some sort of veggie filling on hand!
Although I think a simple black bean taco is great, we’ve recently found a few other methods that are exciting and full of flavor. And they’re all ready in under 30 minutes to make sure you can have a quick and worth-it home-cooked meal.
BBQ Bean Tacos
I just found this recipe like a month ago, but we’ve already made them twice.
If you’re a fan of bbq or baked beans, then you don’t even know what you’re missing putting that filling in a taco! You take some simple canned pinto beans and quickly cook them down with ketchup, dijon, maple syrup, garlic powder and chili powder.
They get a little thick and so flavorful. Then, you pop them in your favorite tortilla and top with salsa, a pineapple or mango salsa (fruit, red onion, jalapenos and cilantro) and top with your other favorite things.

Sweet Potato Tacos
I’ve raved about the health and taste of sweet potatoes many times before on the blog, so it’s probably no surprise that they make an amazing taco.
Whether you would prefer to roast or pan saute them, all you have to do is chop up the sweet potatoes (preferably adding in onion and peppers) and add oil and spices like cumin and chili powder, then cook through.
Adding black beans can also be great with these healthful guys.

BBQ Bean Tacos
Try out these vegetarian BBQ Bean Tacos for an extra flavor punch and cheap weeknight or weekend meal!
Ingredients
- 2 (15 oz.) cans pinto beans
- 2 tbs. Dijon mustard
- 1 tbs. maple syrup
- 3/4 cup ketchup
- 1/2 tsp. garlic powder
- 1/2 tsp. chili powder
- 1/2 tsp. salt
Instructions

Drain both cans of beans. In a large skillet, combine the beans, mustard, maple syrup, ketchup, garlic powder, chili powder, and salt. Heat on low until thickened and warm.

To serve, place the beans in a tortilla, then add whatever toppings you like (lime juice, sour cream, cheese, salsa, cabbage, etc.)
