Do you ever go through old cookbooks just to see what they hold inside?

Cookbooks are a treasure. They’re almost like memory books or scrapbooks that tell you a lot about the time in which they were written or who wrote them.

Once I had a coworker who brought in boxes and boxes of 20+-year-old cookbooks from churches and communities.

My mom found a recipe book from her small hometown in Kentucky and sent me a page with two pies on it.

 

 

One of the pies had 6 ingredients and one of them was coconut. I mean, what else did I need to tell me to bake this pie.

Once you have your pie shell, you just combine eggs, sugar, butter, vanilla, vinegar and coconut. Then, bake and enjoy! It comes out basically like a coconut macaroon in a pie.

 

 

It’s simple and sweet and the ultimate Southern dessert.

French Chess Pie

This French coconut pie is simple and a delicious Southern sweet treat.

Ingredients

  • 1 unbaked pie crust
  • 3 eggs
  • 1 tbs, white vinegar
  • 1 tsp. vanilla
  • 1 1/4 cups sugar
  • 1 cup unsweetened coconut flakes
  • 1 stick (8 tbs.) butter, melted and cooled

Instructions

  1. Heat oven to 350 F. Mix together all ingredients: eggs, sugar, vanilla, coconut, melted butter and vinegar until combined. Pour into an unbaked pie shell and bake for 1 hour or until crust is browned.
