Slow Cooker Chicken Tinga

This might be one of the simplest recipes on think fruitful…and that’s saying something since I have a series called Simple Saturday.

This recipe is one of those that takes 5 minutes to prep and makes about 10 meals, based on how hungry you and your loved ones are.

Several of our local Mexican restaurants (Totopos & Gonza) have started serving chicken tinga, especially on my beloved nachos. It is smoky, juicy and tastes amazing on corn products like tostadas, tortillas and/or nachos.

Chipotle chilies in adobo are sure to be one of your favorite new ingredients. They are for me! Smoky but not too smoky and full of flavor!

Taco Tuesday is coming up, so buy some nice chicken breasts, grab your favorite jar of salsa and a few chipotle chilies, and you’ll be in business! (I especially like pairing this with old-school crunchy tacos!)

Slow Cooker Chicken Tinga

Ingredients

  • 2 lbs. chicken breast
  • 1 jar salsa (16 oz.)
  • 4 chipotle chilies in adobo sauce, chopped

Instructions

  1. Place chicken breast in slow cooker. Add your favorite jarred salsa and chipotle chilies in adobo sauce.

  2. Cook on low for 6 hours. Shred chicken and serve in crunchy or soft tacos, on tostadas or on nachos.
