I know what you’re thinking: red bean…what does that mean? Kidney beans? Red beans and rice beans?
Red beans are super easy to find at the grocery store (mine were in the international section) and are labeled borlotti or Roman beans. They’re white beans with red stripes or markings. You can also sub kidney beans if you can’t find either of those.
This soup turns out so thick and creamy in the best way possible. It’s got a good amount of protein with the beans and farro, so it will be sure to fill you and your family up.
