This recipe is perfect for that with tasty vegetarian enchiladas cooked in a zesty salsa verde.
With these Easy Black Bean Enchiladas, all you need is corn tortillas, black beans, onion, jalapeno, cheese and a few spices.
If you want to be a bit more adventurous, you can always make your own salsa verde, too.
