It’s actually true that this Ingredient of the Month has revolutionized my cooking in the past month.
Before discovering this ingredient, I only saw the world of carrots in orange. And although orange carrots are amazing as is, it’s always fun to have more color.
So, I introduce to you this month’s star ingredient: Rainbow Carrots.

Rainbow carrots are just like your classic orange carrot, but it in a variety of shades. Deep purple with yellow in the middle, white and yellow are a few of the colors that you can find rainbow carrots in.
Although these seem more fun to eat, they taste very similar to regular orange carrots, though maybe a bit sweeter.
Where do I buy them:
You can find rainbow carrots at many grocery stores, such as Trader Joe’s and Whole Foods. They will come in a variety of colors in one bag or bunch.
Where do I store them:
You can store rainbow carrots in the refrigerator, and they will last for weeks (like normal carrots).
How do I use them:
Not only do these carrots look gorgeous with any meal, but they are also sweet and delicious when cooked or roasted. You definitely can’t go wrong with roasting chopped carrots (alone or with other root veggies), olive oil, salt and pepper at 400 degrees for about 30 minutes.
Once the carrots are roasted, you can eat them with a grain, throw them on a salad with some feta or goat cheese, or even put them in a quiche (recipe coming soon this month).
