Second question: Have you ever had or heard of mujaddara?
This middle eastern dish happens to be in the hot section of the salad case at Neomonde, and it is one of my favorites.
Me and mujaddara go way back…well, to about two years ago.
I first stumbled upon this beautifully spiced dish of caramelized onions, lentils and rice at Heirloom in Rogers, AR. I had never even heard of it, but went out on a limb and was so lucky to get to try it.
If you love caramelized onions or basmati rice or lentils, then you will love this dish. And, even better, it is crazy easy to put together. Bonus points if you have day-old rice in your fridge to use.
The spices are warm and comforting (hey cumin and cayenne) and the rest of it is totally vegetarian but filling and satisfying. This is also a super budget-friendly meal!
I like to think of it as a healthy ethnic casserole-like dish.
