Like, is there a recipe calling your name, but you’re just not sure if you can do it?
For me, I’ve never made a lasagna (before this summer) because I thought it would be super labor intensive and difficult. Boy, was I wrong.
Lasagna is fairly easy to throw together, and after it cooks for a bit in the oven, you’ve got an amazing casserole-like dish to eat on for days.
It’s also a great way to bridge the gap between seasons. It’s cheesy and comforting and perfect for cool nights, but it can still be absolutely delicious with summer produce…like summer squash and fresh corn.
That’s what this Burrata & Squash Lasagna is all about.
It’s fresh, simple and cheesy. What more could you want?
I was actually working later when we made this and just gave my husband the recipe. He did great, and I know you’ll love this one as much as we did.
