Once again, I’m enamored by the bounty of summer.
New colors, textures and shapes of produce amaze me every time I go to the farm stand. There is so much goodness to enjoy.
So much bounty.
I do so love the South.
One of the things that I especially love about the South is fried okra.
This dish takes a somewhat slimy, odd vegetable and makes it taste like popcorn- salty and addictive.
Although I do love fried okra, I don’t often have the time or energy to make it. So, I decided to make a shortcut to fried okra with these Okra Cakes.
All you have to do is slice up some okra, add in an egg, cornmeal and seasonings. Mix together then fry into little cakes.
Because we all know that no one really wants to stand over hot oil for much longer than 10 or 15 minutes in the heat of summer.
So, here’s your ticket to fried okra the easy way. Best paired with heirloom tomatoes and other homegrown specialties!
