If you’re a cook, then they’re are a few things that you have to get used to.
You have to wash a lot of dishes.
You have to like experimenting.
You have to like leftovers.
Well, hopefully you already like leftovers, or you’ll come to like them.
If you’re anything like me, when you make delicious dishes (especially with soups and casseroles), you’ll start to look forward to taking a little Pyrex of leftovers to work and enjoying those beautiful flavors you created.
We tried out this 30-minute Chicken Posole from the Kitchn last weekend, and I was oh so happy to have leftovers for days.
If you’ve never had posole, it’s a Mexican treat with a complex spiced chicken broth, along with chicken or pork and hominy. And one of the best parts about it is topping it with hot sauce, radishes, avocado, cilantro and eating it along side crisp corn tortillas.
I was really amazed how deep the flavor of this 30-minute broth was, and the soup tasted very similar to the posole I’ve had in Mexico.
If you have 30 minutes, you should definitely dive into this brothy, soul-warming soup.
