When it starts getting dark so early, all I want to do is come home, put my pajamas on and eat a warm dinner that’s quick and easy.
Anybody else feel me?
If you’re in the same camp, you might want to start making some freezer meals that you can pop in the oven or put on the stove and have dinner without any work.
I’m totally a do the work beforehand to save yourself time in the long run type of person, and I find that it really pays off.
When I first made these Kale & Sausage Stuffed Shells from Shutterbean, I put them away in the freezer, dreaming of the day when I would have guests over to feast on this Italian delight.
And when that day came, it was just as great as I had hoped. I threw the dish in the oven, cooked it for an hour and a half (a little more than expected, but it’s worth it), and enjoyed the flavorful, comforting results.
Each of the shells is wrapped in marinara sauce and stuffed with a seasoned mixture of kale, ricotta, Parmesan and parsley, and topped with mozzarella. What could go wrong?
