So, I have to be honest with you readers.
I had every intention of doing another round of “Goodies to Gift” like I did last year (which I just realized was a 5-day series)…and then life got crazy like it usually does.
In between four different airport-involved trips (to Arkansas and Wisconsin respectively) in the past month, a lack of light in the evenings which makes it super hard for me to get a good picture of anything, and the fact that I haven’t been cooking as much because of aforementioned travel, it just didn’t happen. I even had it on my blog calendar…and yet.
This year, it was sadly an “Ain’t nobody got time for that” situation.
Sorry, ya’ll. You’re not going to get as many Christmas sweets as you did from me last year. But, there’s hope. I still have all of those wonderful sweets recipes from last year (listed at the end of this post), and I’ve got a few to tempt your palette and fill your cookie bag this week (they might just be off of the normal blog schedule a bit).
On to these delicious, buttery and seasonally-appropriate (for, well, any season) Cacao Nib Shortbread.
These guys are Christmas perfection. They’re crunchy, British-inspired and basically the new chocolate chip cookie. These taste like a chocolate chip cookie went to a posh London party in a designer dress.
I was lucky enough to get Escazu cacao nibs (a local chocolate maker) at a nearby brewery, but I’m fairly certain you can find cacao nibs for yourself at the grocery store or a specialty foods store.
Why, you ask, do you need cacao nibs? They have a depth of flavor and texture that chocolate chips are nowhere near. They’re special. They’re fancy. YOLO. Have I convinced you yet?
