There are days when you feel like eating a power salad, taking a 2-mile walk and checking 20 things off of your to-do list.
And there are also days when you just feel like wearing your (some type of) fur-lined slipper booties and eating a plate of something sweet drenched in syrup.
While I love those first days, I’m also a sucker for the second type.
It’s all about balance.
For those lazy days, these Pumpkin Waffles are the perfect fix.
A little bit crunchy on the outside, tender and cake-like on the inside with tons of warm and sweet spices. I really love the extra ground ginger in these.
These days, if it’s got ginger in it, I will eat it! It’s so perfectly sweet and spicy.
Pumpkin Waffles are super easy to throw together and are the perfect landing pad for Honey Cinnamon Butter and some natural (or whatever you’ve got) maple syrup.
