I’ve got a Thanksgiving-inspired recipe that is simply easy to make and simply delicious. I really enjoy Thanksgiving, but one thing that I don’t like is spending all day in the kitchen. Even though I love cooking, I love being able to hang out with family even more.
This Mushroom Spinach Farro is a nice quick and healthy play on your Thanksgiving stuffing. You can even make it gluten-free by subbing brown rice or quinoa for the farro.
If you’ve haven’t hopped on the farro train yet, Thanksgiving is the perfect time to do so. Farro is a wheat-based grain that’s the perfect consistency (soft with a little chew), and it’s basically impossible to mess up.
