The other day when I was making our meal plan, I asked my husband which soup he wanted me to make.
I mentioned a quinoa chili, butternut squash soup, a curried carrot and apple soup and West African Peanut Stew.
I guess I had him at West African Peanut Stew, because his eyes got really big, and he said “That one!”
What a blessing to be married to a fellow adventurous eater, who enjoys foods form all cultures.
Not only was this stew different from the norm, but it was super simple to make. Fresh ingredients like kale (or collards), ginger and garlic pack a punch and peanut butter and tomato paste come in to make this sauce/soup/stew thick and creamy.
This West African Peanut Stew is perfection on brown rice, and I’ve heard it would be great with sweet potatoes, too.
