Good Saturday morning out there!
I have a feeling it’s going to be a crisp, beautiful day. And I’m going to the NC State Fair later on, so that should be interesting. I’ll report back on the fried foods that I sample.
In the mean time, I thought this would be a good time as any to talk about a very important ingredient in all of our fridges: eggs.
Do you like eggs?
Eggs are one staple that I always have on hand, whether I’m baking or just doing some egg in the holes for dinner. Eggs can always be really great or really not.
Starting out with fresh eggs is the best option here. I know that you might not have chickens in your backyard laying eggs (neither do I), but that’s why we have local farms and Whole Foods that carry local eggs!
Once you’ve got the eggs, there’s so much that you can do with them. Here are some my favorite uses:
- Quiche– Like this or a crustless quiche like this
- Frittata– Just saute whatever veggies you’ve got in the fridge, add some whisked eggs and bit of milk then sprinkle on some cheese (goat preferably) and finish in the oven.
- Shakshuka– Tomatoes and eggs are amazing together
- Pasta Carbonara– Bacon, eggs and pasta are made for each other
- Eggs & Toast– Easy and classically delicious
I find that if I’m low on dinner ideas, having a carton of eggs in the fridge is a perfect excuse to whip up something fast and tasty.
