Pumpkin is all over the grocery store/everywhere…and I LOVE it!
Living near Trader Joe’s has amped up my love of pumpkin things to a whole new level: pumpkin cornbread, pumpkin soup. I can’t get enough.
I’m all about the more traditional recipes for which you keep pumpkin puree on hand (btw: I love TJ’s organic version). You know, pumpkin pie, pumpkin bars, etc.
But I love running across recipes that introduce new ingredients and put old recipes in a new light. This Coconut Oil Pumpkin Bread from Gimme Some Oven does that and does it fantastically well.
You would absolutely never know that this moist, tender, perfectly spiced pumpkin bread didn’t contain any butter. You would just know that what you’re eating is fall perfection.
Speaking of spices, the recipe calls for pumpkin pie spice, but I happened to not have any of that on hand. So, I just did a quick substitute with 1/2 cinnamon and 1/2 all-spice. But your spices are up to you! You can even perfect your own pumpkin pie spice.
We just finished the loaf that I made for our NC cabin trip last weekend, and I’m already thinking of making another. I’m also thinking about when my next (and longer) cabin vacation can be arranged.
