Simple Saturday: Freezer Burritos

Happy weekend everyone!

I had such a great/busy/food-filled week. Every night, we had a new event (from dinners to Andrew Bird concerts), and we even got to go out on a weeknight! I know- we’re spoiled.

Spending money on special occasions means that we’re super into cheap, homemade lunches at our house.

From pbj’s to stir fry, we’ve got a few lunch tricks up our sleeves…and we’re getting more.

A few weeks ago, I finally decided to try out Shutterbean’s Freezer Burritos.

This is probably one of the best food ideas I’ve tried out in a while. My husband, an avid frozen burrito or any type of burrito lover, said these were even better than the store-bought ones!

All you do to make them is cook a batch of Mexican rice (white rice with 1 can of diced tomatoes, some water, onion, cumin, chili powder and garlic), then lay out tortillas, warmed refried beans, shredded cheese, salsa and cilantro. When you’re ready to roll (pun intended), just layer everything on the tortilla, roll it up, then wrap it in foil and throw it into the freezer.

Voila! You have a half a dozen or so burritos waiting to be heated up for a few minutes in the microwave and eaten.
