Remember last Saturday when I wrote about the ups and downs of house hunting?
I was in a bit of a discouraged spot for a few days, but I have good news that we stumbled upon a really cute townhouse in Raleigh that’s the perfect bit of space for my husband and I for the next year!
I’ve cancelled my Zillow and Realtor.com searches and I couldn’t be more happy about it.
We’re moving in this weekend and we’ll be getting used to having a two-level place (big deal, right?!) and I even have a mantel to start thinking about decorating. (I’ll be channeling my Martha Stewart/Nate Berkus vibes for that project.)
I can’t wait to be settled in our new place but it has been a blast living with family for the past month…and some of the funnest times have been dinner and dessert.
Every week my sister and I each pick 2 meals to make for the four of us and then we get to sit at the table and enjoy each other’s cooking every night. I love going through the news and funny stories of the day over food that we’ve created.
If you’re having trouble breaking an eating-out-for-dinner streak, let me tell you that there isn’t anything better than sitting down to a table decorated with plates heaped with delicious looking and healthful food. (And for our desserts, let’s just say there have been a lot of crumb cakes and ice cream sundaes involved.)
This recipe for Garlic Kale Gnocchi is perfect for that filling, tasty and greens-filled meal. I love kale, but if someone you’re feeding doesn’t, this would be a great place to “hide” it in a creamy cheese sauce and potato dumplings.
The gnocchi only have to be boiled for a few minutes then they’re combined with a roux that you’ve turned into a thick, Italian blend cheese sauce with softened, garlicky kale.
Then, the whole casserole gets baked and bubbly for a bit in the oven with a Panko topping.
