No matter what people say about giving up snacks to be healthier, I gotta have ’em.
Snacks go great with an afternoon cup of tea and they keep me energized during the day.
But we all know that there are healthy snacks…and there are snacks that leave you with cheese dust on your fingers.
Although I advise everything in moderation, I have a snack for you that’s healthy and only has 5 ingredients.
I had been looking for an easy granola bar recipe for awhile and was thrilled to stumble on Minimalist Baker’s. And it helped me use up the bag of pitted dates that I had bought a few months ago at Aldi.
These Granola Bars are nutty, crunchy, soft and sweet in all of the right combinations.
When I made these bars, I had a bit of trouble with them falling apart but I think it’s because my food processor was out of service and I had to use my stand mixer to process the dates. So, I suggest using a food processor if you have one.
But no matter what kind of shapes, sizes or pieces these Granola Bars are in, they are delightful and the perfect healthy snack.
