Chai Tea Cookies

January is going to be a great month.

Reason 1: It’s my birthday month! This means parties, friends and celebrating 26.

Reason 2: Sherlock Holmes and Downton Abbey come back. Oh the wonderful British drama.

Reason 3: Eating these Chai Tea Cookies.

Ok, so you can really make these cookies any month, but they’re so great in January because in the cold weather you’re bound to be getting your cup of tea on and needing a slightly sweet, slightly spicy bite to pair it with.

And that’s right where these lovelies come in to the picture.

I brought these to a work wedding shower today and I heard someone say, “These taste just like chai tea.”

And they do because they have this wonderful secret ingredient in them…are you paying attention…it’s real chai tea. Straight from the bag (or loose leaf, if you have it).

The tea gets cozy with the flour, sugar, butter and vanilla, along with ground cinnamon and cardamom to enhance those spices.

I almost gave up on this recipe the first time I made it because after I pulsed all of the necessary ingredients I was to roll it into a log on wax paper. And the dough wasn’t very dough-like; it looked more like flour. So, having made all of those pie crusts, I thought it looks like a pie dough before I stream the water in. So, I added a bit of milk and voila, the dough formed!
