Well, I’m back on the soup train…and actually I never really got off.
No matter the season or weather, you can almost bet that at least one day a week I’ll be eating a Pyrex bowl of soup on my lunch break. And if I don’t spill half of the soup on the floor and on myself like I did with this Tomato Orzo soup a few weeks ago (true story), I’ll be in good shape.
I mainly like soups because they’re so easy to make, I need something to use all of my homemade vegetable stock on and they’re usually cheap.
This Tomato Orzo Soup is nice because it’s still got the classic, warming tomato soup flavor with creaminess from yogurt and an added oomph with the orzo pasta.
If you’ve got people in your household who think soup is not a meal, this would be a great one to help you prove them wrong.
And you can never go wrong by pairing it with a gooey, homemade grilled cheese.
