Last week, I had a work-from-home day and was blessed with a little extra time to cook my dinner.
And I had a little time to watch Netflix.
My mom recommended that I watch Haute Cuisine, a lovely French movie about a woman who was a private chef for the president of France for two years. It was a delightful few hours full of incredible French food and cooking.
And the rich flavors on the screen inspired me to make myself a little bit indulgent and very love-filled quiche.
I used a few ingredients that I had laying around the fridge: kale, goat cheese, onions and bacon.
You have to understand that bacon is an absolute treat for us. We probably buy it twice a year for special occasions and I happened to have bought some for New Year’s breakfast (lucky us).
So, I brought out my handy cast iron skillet and fried up the bacon, used the grease to make the best caramelized onions I’ve ever made and then soften some kale. Then, I relied on some old friendly quiche ingredients (eggs, milk and cream) to make my favorite type of quiche: rich, creamy and filling.
I know that quiches can be made with healthier ingredients or without cream, but this is the way I like them, and it’s worth it for a treat.
