It was one of those days.
One of those days when I just needed a little cupcake. You know what I mean?
Cupcakes have definitely been one of the big fad foods for the past few years, but I can understand why. They are like a bite of delicious cake and frosting that’s the perfect size. Although I find it hard to find really great cupcake shops, one of my favorites is Cuppies and Joe in Oklahoma City (in case you wanted to know).
Anyway, I kind of cheated on these cupcakes and only made the icing from scratch. For the actual cake, I used a box mix. Sometimes a short cut is just what you need to get cooking, and I think that’s OK.
I also happened to be craving something delicious for the icing and something easy to make. I decided on a peanut butter buttercream, which I had never made but turned out well.
And there you have it: a delicious topping for cupcakes, cakes or even sandwiched between cookies.
Sometimes you just need a cupcake and sometimes it just needs some creamy, peanut buttery stuff on top of it.
