Southern food is so near and dear to my heart.
It’s basically for pulled pork that I can’t be a vegetarian.
And that creamy mac and cheese and crisp fried okra gets me every time.
But, I also love my greens, fresh veggies and salads — which are totally apart of my heritage, too. Hello, summer fresh tomatoes, pickled onions and clean cucumber.
It’s so nice to have a few simple salad or veg recipes to whip up to add to a buffet of fried chicken, pork, brisket or whatever you’ve got going on.
This Cucumber Salad is low on ingredients and high on clean, fresh flavors. Cucumbers combine with tomatoes, scallions and rice vinegar to balance it all out.
I know I bought rice vinegar a few months ago for some purpose, and this is a great one.Thanks to Bon Appetit for the inspiration!
