I’ve been saving this recipe until spring started showing itself, and considering I (and most others in Raleigh) spent yesterday out and about enjoying the 70-degree weather, I think it’s about time.
Whenever I studied abroad in Oxford back in my college years, I remember seeing Pimm’s Cups on menus all over town. I was more of a hard cider girl back in those days, so I never ended up trying one.
The good news is that liquor stores in the states carry Pimm’s No. 1, so I finally got my chance to try this cocktail out!
This drink is my ideal cocktail: simple, slightly sweet and it contains ginger and citrus.
This Pimm’s Cup is perfect for spring (and summer) drinking. The Pimm’s flavors it with rich cherry and maple hints, then the ginger ale (or dry soda) comes in with bubbles and flavor, and the lemon and cucumber finish it with a balance of savory and tart.
You can totally feel like a queen or king when sipping a Pimm’s Cup, and I suggest drinking one while on the green watching a polo match. Or, maybe just when you’re catching up on Downton Abbey.
