I hope you all had a nice Sunday, and that you either got to pig out while watching the Oscars, Downtown Abbey and/or The Great British Baking Show.
If you haven’t heard about that last one yet, you must turn on PBS an hour before Downton. This sweet little British baking competition will steal your heart.
Back to today’s recipe, I’ve got another soup to share!
I suppose with the cold weather, everyone (myself included) has an increased desire for comfort food. Lately, I find myself making a lot of pasta, stir fry and Mexican food, each comforting in their own way.
I’ve also been seeing a lot of bloggers posting Chicken and Eggplant Parmesan recipes, and then this Chicken Parmesan Soup came along, offering the perfect mix of comfort food and slow cooker.
If you’re feeding people who complain that soup isn’t enough for dinner, then this is the recipe for you! This Chicken Parmesan Soup is very filling and trasmits the exact same bold flavors of a cheesy, tomato-ey chicken parm (but I’d like to think it’s a bit healthier).
Throw this in your slow cooker before you leave for work, then add the pasta when you get home and get ready for a comforting bowl of hearty, unique soup.
