Sometimes it can be difficult to motivate yourself to eat a salad this time of year.
It’s cold outside, and, I get it, all you want is a big bowl of creamy soup or a casserole piping hot with melted cheese.
Also, we’re no longer in the days of sun-ripened tomatoes or a variety of berries to choose from.
But, never fear, I have a great winter salad idea that is anything but boring. This one combines tart and sweet citrus with pomegranate and creamy avocado.
My mom has been making this Pomegranate Grapefruit Avocado Salad for many years, and it’s become a family favorite. It’s simple to throw together and always pleases a crowd.
Here’s how you make it:
1. Combine mixed greens with segmented grapefruit slices, pomegranate seeds and sliced avocado and top with a delicious vinaigrette (soon, I hope to be sharing my mom’s vinaigrette recipe with you guys!)

If you need help de-seeding a pomegranate, just cut it into quarters and whack the red skin of those quarters with a wooden spoon until the seeds pop out into a bowl. Or you can use this underwater method.
