So, I’ve been hearing for awhile that salad dressing is not the best thing for you.
There’s some possibly extra sodium, fat and calories going on. Don’t get me wrong, I’m still into my Trader Joe’s Goddess Dressing.
But sometimes I just want something quick and light that I can make from pantry products I already have.
In comes this Simple Vinaigrette. It’s everything you want it to be: flavorful, quick and flexible (it goes with most all salads- sweet and savory).
Here’s how I make my Simple Vinaigrette:
For 1-2 salads, combine a few tbs. of olive oil with a tsp. or so of red wine vinegar, salt and pepper, and some lemon juice (if you have it). Then, shake it all up and your dressing is ready to go!
You can also customize this dressing by using different types of vinegar, adding special herbs, garlic or Dijon.
