I feel like I need to apologize that I haven’t done many meal posts lately.
Since the nice weather and good produce hit, I’ve been all side dishes and desserts!
But, it’s all about balance, right?
This Spinach Feta Crustless Quiche is a dish I happened upon on the internet and saved in case there was ever a time when I wanted a quick quiche and didn’t have a crust on hand.
I love quiches for many reasons, one of them being the crust, but sometimes I don’t a few hours to let that Pie Dough chill in the fridge.
I was really impressed that I didn’t even miss the buttery, flaky edge on this one.
This guy is packed with flavor from fresh (or frozen) spinach, mushrooms, three kinds of cheese and creamy eggs and milk.
I love that you can make it in your cast-iron skillet and turn it into a easy one-pan meal. In fact, whenever I made this, we went on a short nature walk while it was in the oven and came to back to a delicious-smelling house and satisfying meal.
