Simple Saturday: Asian Broccoli Slaw

So, my husband and I are officially moved to North Carolina!

We still have no permanent residence (thankfully we have family to house us for now) and I’m still looking around for a job, but we’re happy to be here.

And we brought a crazy snow storm with us…oops. Sorry, ya’ll.

One of the most important things for me about moving to North Carolina was moving near a Trader Joe’s. I’m obsessed with the variety and creativity of the products at TJ’s. So, you’l probably be seeing a lot of TJ’s inspired recipes coming down the pipe.

For months I have been hearing bloggers and friends talk about broccoli slaw and haven’t had a chance to try it. But you had better bet that on my first trip to Trader Joe’s I saw that slaw and grabbed a bag. I decided to make my salad really simple by just adding a bottle dressing and picked TJ’s Goddess dressing, which is vegan and boasts flavors of soy, lemon and sesame (from tahini).

I also had some fresh cilantro that I thought complemented the slight Asian flavors of the dressing well.

So, here’s how you make my Asian Broccoli Slaw:

1. Combine 1 bag of broccoli slaw with about 1/2 cup (or about 1/2 bottle) of Trader Joe’s Goddess dressing. (If you don’t live near a TJ’s, I suggest using an Asian-type dressing or maybe a mixture of tahini, oil, lemon and yogurt.)

2. Mix everything together until the slaw is evenly coated in dressing and add some fresh chopped cilantro and toss.

It’s that easy and incredibly fresh, crunchy and delicious. I feel like some chopped peanuts would be a nice topping for this slaw, too!
