Remember when I promised you some more vegetarian meal ideas back at the new year?
Well, here’s a super easy and tasty idea for your next meatless meal.
Potato latkes (of course, paired with sour cream and applesauce).
They’re crispy, they take like 15 minutes to make, and they’re kind of like glorified hash browns.
Yes, I WOULD like an excuse to eat hash browns for dinner, thank you!
Grab your Yukon Golds, onion, cheddar cheese and get to crisping these ingredients together into small pancakes.
And then (or maybe the day before), take a few apples especially if they’re grainy or a few days old, boil them with lemon juice, brown sugar and seasonings and you’ve got a match made in heaven.
Crisp, savory potato cakes topped with sweet, cooling applesauce…and of course there’s sour cream for those of you looking for some extra richness.
(So my potato to applesauce to sour cream ratio in that last photo might be a little skewed, but it’s just to show you how tasty the applesauce is.)
